I hope you’re having a great week! The weather is incredible where I am this week and I’ve been soaking in as much time outside as possible.

I don’t know what it is about seeing the sun that makes me want to dive into a delicious bowl of homemade guacamole, but here’s just something about the heat that takes me to a beach on Mexico sipping margaritas and eating guacamole with fresh chips.

Now, just because we aren’t in the tropics doesn’t’ mean we can’t enjoy the delicious and healthy benefits of guacamole. So, today I wanted to pop in and share my mouth watering sugar-free guacamole recipe with you!

With avocados, fresh garlic, tomatoes, and herbs this guacamole is a powerhouse of nutrition. Because of its high-fat content, it’s naturally very low in carbohydrates and sugar which makes it a great snack if you’re feeling hungry or have a sugar craving coming on. Try using cucumber slices or carrot sticks instead of chips or bread for dipping. You can also mix it in with eggs for a delicious morning scramble!

Easy Peasy Guacamole
Time: 10 minutes
Serves: Approx 2 cups

Ingredients:

  • 3 ripe medium avocados
  • 1/2 red onion, diced small
  • 3 cloves garlic, minced (more if you love garlic!)
  • 1 medium tomato, diced small
  • Juice of 1/2 a lime
  • 1/2 tsp salt
  • Pepper to taste
  • Optional: 1/4 cup cilantro or parsley, chopped

Directions:

  1. Place the avocados in a medium bowl and mash with a fork until smooth.
  2. Toss in the remaining ingredients and stir well to combine.
  3. Enjoy immediately or cover and let rest in the fridge for 1 hour to let the flavors combine better.

 
This recipe is perfect if you need a quick snack or feel a sugar craving coming on. Avocados are loaded with healthy fats and the raw garlic and onion are powerhouses when it comes to boosting your immune system.
